Pina Colada Jam
Today has been a hella long day. This may sound stupid, but Wednesday is cleaning day, only because the house cleaners come on Thursday. I feel like I need to have my house presentable in order to have them come scrub the bathtubs, showers, and mop the floors. Alice (my house cleaner) is a great person. She calls every Wednesday to tell me she will be here at 10:30am on Thursday. One of her qualifications, is she is awesome at vacuum tracks. I wouldn’t say I have OCD…(shut up Bree) but she is very good at lining up her vacuum tracks. She doesn’t overlap them too far. She doesn’t do them in every direction. They are straight, evenly spaced, and so pretty. Anyhow, we were tired of cleaning, so Chloe and I decided to take a little break, because I had a pineapple that needed used. I looked for a recipe we could use to get rid of it. That’s just what we did. Pina Colada Jam. Sounds good…right? Let me tell you, I LOVE it. The recipe we used is as follows:
2 1/3 cup fresh pineapple
1/3 cup coconut rum
1/2 t. butter
3 1/3 cup sugar
1/4 cup coconut
3 T. pectin
I tossed it all into my jam maker, and VOLIA! Hot, steamy, goodness. What is your favorite jam? Would you share the recipe? Have you ever tried jaleapeno jelly?
